- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp salt
- 1 tbsp fresh rosemary (or 1 tsp dried)
- 2 cloves garlic, minced
Instructions
- Preheat oven to 400°F (200°C). Wash and halve baby potatoes. Pat them dry with a towel to remove excess moisture.
- Place potatoes in a large bowl. Add olive oil, salt, rosemary, and minced garlic. Toss to coat evenly.
- Spread potatoes in a single layer on a baking sheet. Use parchment paper to prevent sticking.
- Bake for 40-45 minutes, flipping halfway through. Potatoes are done when golden and crispy. Serve hot and enjoy!

Use waxy potatoes for best texture. Preheat your tray for an extra crispy crust. Add Parmesan or cayenne for a tasty twist!
