Ingredients

  • 4 pieces chicken breast (boneless, skinless, even thickness)
  • 1 cup grated Parmesan cheese (freshly grated for best flavor)
  • 1 cup breadcrumbs (Italian-style)
  • 2 large eggs
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken dry and pound to even thickness.
  2. In one bowl, mix Parmesan cheese and breadcrumbs. In another bowl, whisk eggs with salt and pepper.
  3. Dip each chicken breast in egg mixture, then coat in Parmesan-breadcrumb mix. Press firmly for full coverage.
  4. Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 2-3 minutes per side until golden. Transfer skillet to oven and bake for 15-20 minutes until cooked through.
