Instructions
- Preheat oven to 400°F (200°C). Pat chicken dry and pound to even thickness.
- In one bowl, mix Parmesan cheese and breadcrumbs. In another bowl, whisk eggs with salt and pepper.
- Dip each chicken breast in egg mixture, then coat in Parmesan-breadcrumb mix. Press firmly for full coverage.
- Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 2-3 minutes per side until golden. Transfer skillet to oven and bake for 15-20 minutes until cooked through.
Notes
For extra crispiness, broil chicken for the last 1-2 minutes. Use fresh Parmesan for the best flavor and ensure chicken reaches 165°F (74°C) internally.
