- 1 lb Chicken Breast (cut into bite-sized pieces)
- 2 cups Broccoli Florets (fresh, for crisp texture)
- 1 cup Bell Peppers (mixed colors, sliced thin)
- 2 tbsp Soy Sauce (or tamari for gluten-free)
- 1 tsp Sesame Oil
- 2 tbsp Coconut Oil (for cooking)
Instructions
- Start by cutting your chicken into small pieces. Slice the bell peppers and rinse the broccoli. In a small bowl, whisk together soy sauce and sesame oil for the sauce. Keep everything ready.
- Heat a large skillet or wok over medium-high heat with 1 tbsp of coconut oil. Add the chicken pieces and cook for 5-7 minutes until golden and nearly cooked through. Remove and set aside.
- In the same skillet, add another tbsp of coconut oil. Toss in the broccoli and bell peppers. Stir-fry for 4-5 minutes until they’re tender but still crisp. Add a pinch of salt if needed.
- Return the chicken to the skillet. Pour the sauce over everything and stir well. Cook for 2 more minutes until the sauce thickens slightly. Serve hot and enjoy your meal!
