Ingredients

  • 2/3 cup natural chunky peanut butter
  • 1 cup unsweetened shredded coconut
  • 1 tbsp unsweetened cocoa powder
  • 4 drops liquid vanilla stevia

Instructions

  1. Line a small sheet pan or plate with parchment paper. Gather all ingredients and a microwave-safe bowl.
  2. Melt butter in the microwave for 20 seconds. Stir in peanut butter and cocoa powder until smooth.
  3. Add shredded coconut and stevia drops. Mix well until the mixture is thick and holds its shape.
  4. Scoop 1 tablespoon per cookie onto parchment-lined pan. Freeze for 15 minutes. Store in fridge with parchment between cookies.
