- Line a small sheet pan or plate with parchment paper. Gather all ingredients and a microwave-safe bowl.
- Melt butter in the microwave for 20 seconds. Stir in peanut butter and cocoa powder until smooth.
- Add shredded coconut and stevia drops. Mix well until the mixture is thick and holds its shape.
- Scoop 1 tablespoon per cookie onto parchment-lined pan. Freeze for 15 minutes. Store in fridge with parchment between cookies.
