- ½ cup granulated sugar
- ½ cup canned pumpkin puree (pure, not pie filling)

- 2 tbsp brown sugar (for swirl)
- 1 tsp ground cinnamon (for swirl)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan or line it with parchment paper.
- In a large bowl, whisk the egg, granulated sugar, pumpkin puree, oil, and vanilla extract until smooth.
- In another bowl, sift together flour, baking powder, baking soda, and pumpkin pie spice.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared pan.
- Mix brown sugar and cinnamon, then sprinkle over the top.
- Swirl lightly with a knife.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
Use pure pumpkin puree, not pie mix. Don’t overmix the batter to keep bread tender. Cool completely before slicing to prevent crumbling.
