Ingredients

  • 1 large egg (room temperature)
  • ½ cup granulated sugar
  • ½ cup canned pumpkin puree (pure, not pie filling)
  • Oil
  • Vanilla extract
  • All-purpose flour
  • Baking powder
  • Baking soda
  • Pumpkin pie spice
  • 2 tbsp brown sugar (for swirl)
  • 1 tsp ground cinnamon (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. In a large bowl, whisk the egg, granulated sugar, pumpkin puree, oil, and vanilla extract until smooth.
  4. In another bowl, sift together flour, baking powder, baking soda, and pumpkin pie spice.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared pan.
  7. Mix brown sugar and cinnamon, then sprinkle over the top.
  8. Swirl lightly with a knife.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Cool before slicing.

Notes

Use pure pumpkin puree, not pie mix. Don’t overmix the batter to keep bread tender. Cool completely before slicing to prevent crumbling.
