- 2 cups rolled oats (old-fashioned works best)
- 1 cup fresh or frozen blueberries
- 2 ripe bananas
- 1/4 cup almond butter (or any nut butter)
- 2 tbsp maple syrup (optional for extra sweetness)
- Almond milk (if needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking dish with parchment paper or lightly grease it with cooking spray.
- In a large bowl, mash the bananas until smooth.
- Add the rolled oats, almond butter, and maple syrup (if using).
- Stir everything together until well combined.
- Gently fold in half of the blueberries into the oat mixture.
- Spread the mixture evenly into the prepared baking dish.
- Top with the remaining blueberries.
- Bake for 15-20 minutes until the top is golden and a toothpick comes out mostly clean.
- Let it cool for 5 minutes before slicing into squares.
Notes
Use rolled oats for best texture. Frozen blueberries work just as well as fresh. Store leftovers in the fridge for up to 5 days.
