Description

A cozy, easy, and healthy breakfast packed with juicy blueberries and hearty oats. Perfect for beginners and busy mornings, great for meal prep!


Ingredients

  • 2 cups rolled oats (old-fashioned works best)
  • 1 cup fresh or frozen blueberries
  • 2 ripe bananas
  • 1/4 cup almond butter (or any nut butter)
  • 2 tbsp maple syrup (optional for extra sweetness)
  • Almond milk (if needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch baking dish with parchment paper or lightly grease it with cooking spray.
  3. In a large bowl, mash the bananas until smooth.
  4. Add the rolled oats, almond butter, and maple syrup (if using).
  5. Stir everything together until well combined.
  6. Gently fold in half of the blueberries into the oat mixture.
  7. Spread the mixture evenly into the prepared baking dish.
  8. Top with the remaining blueberries.
  9. Bake for 15-20 minutes until the top is golden and a toothpick comes out mostly clean.
  10. Let it cool for 5 minutes before slicing into squares.

Notes

Use rolled oats for best texture. Frozen blueberries work just as well as fresh. Store leftovers in the fridge for up to 5 days.
